Grapes: 100% Cabernet Sauvignon.
Production Area: The grapes come from a vineyard belonging to the Company in the area of Montello – Province of Treviso, Veneto Region.
Soil: Medium soil, clayey with tendency to calcareous.
Vineyard Exposure: South
Vineyard Height: 180 m above sea level.
Training System: Spurred cordon.
Production u/ha: To obtain high quality grapes, the bunches are thinned out before the onset of ripening, thus limiting the production to 500 kg per hectare.
Vintage: October
Sparkling Wine
Production Process: The select bunches are laid on drying racks for about 20 days vinification on the skin at a temperature of about 24° C. The maceration lasts about 12-15 days. Ageing in oak barrels French and American for about 24-30 months and a further 6-8 months in the bottles.
ORGANOLEPTIC PROFILE
Colour: Intense ruby red with purple reflections
Bouquet: It has marked scents of tobacco with nuances of black pepper, leather, liquorice and fine vanilla touches.
Flavour: Delicious combination of typical tastes with velvety tannin. Dry with a fresh final taste and savoury notes. Well balanced and harmonious.
Recommended Food Ideal with red meat, venison, herb and seasoned cheese.
Serve at: 18°-20° C. Open the bottle some hours before and decant to oxygenate.
